Polenta is cooked in steam cookers of stainless steel to preserve the natural flavor of corn. The long cooking time, combined with the mixture of selected flours, make the product remain dry and soft over time. Polenta is packaged at a temperature of about 90 C. with a procedure during which it is never in contact with neither the operators nor the weather, thus creating a natural sterilization which enhances its flavor characteristics and guarantees its life without adding any conservatives.
Gnocchi are mixed and shaped through a process designed to obtain the typical qualities of a homemade product.
When ready at table, they immediately offer the palate the sweet taste of potatoes and their soft and pasty texture, absolutely not rubbery.
